Day Forty-Five

I did another Live Stream Bedtime Story this evening. It was SO much fun. You can find it on my Ava Reads page, or watch a replay of it here: https://youtu.be/UbskruAFFMI. (and hopefully the viewers liked it too).

We also made healthy Chocolate and Raspberry Oat Balls. They were delicious! I ate too while they were still warm.

The recipe is here (thanks to my friends at OTE Sports):

  • 110g Plain Flour
  • 135g Oats
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 50g Coconut Oil (melted)
  • 3 tbsp Honey
  • 1 Large Egg
  • 1 Egg yolk
  • 30g Shredded Coconut
  • 75g Dark Chocolate (chopped)
  • 2 handfuls of Frozen Raspberries

Set the oven to 170c, melt the coconut oil then allow it to cool slightly so it doesn’t scramble the eggs.

Combine the coconut oil, eggs, vanilla and honey. Whisk until smooth.

Then add your dry ingredients, such as flour, oats and coconut and combine. Finally fold in the chocolate and raspberries.

Grab two baking trays. You can use a tablespoon or it may be easier to use you hands to roll into around 15 balls. If you want more of a cookie feel, then you can flatten the balls on the tray. Leave some space between each one.

Place in the oven for around 12 minutes or until they start to turn golden brown. Leave to cool on a rack before eating….or try to 😉
